Chicken Satay
Ingredients
- 1 pound chicken legs and thighs, cubed
- 3 Tablespoons oil
- 2 stalks lemongrass white parts only
- 2 cloves garlic peeled
- 6 shallots peeled
- 2 teaspoons turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon chili powder
- 1/2 Tablespoon salt or to taste
- 2 Tablespoons sugar
Directions
Combine all the ingredients except for the chicken in a blender and blend until smooth. Use this to marinate the chicken overnight.
Thread onto skewers and grill until cooked, 2-3 minutes, basting with oil as needed.
